Delicious Crispy Mushroom Spring Rolls

Spring Rolls are popular starters served in most restaurants. These can now easily be prepared at home and make an amazing delicious starter specially enjoyed by kids.

These tiny rolls are stuffed with vegetables and fried till crisp and golden brown. One can use vegetables of choice and also add chicken to it to make delicious chicken spring rolls. I have used Mushrooms as the main ingredient for stuffing. You can use home made wrappers or ready made frozen wrapper easily available in the market. I have used the frozen wrappers to prepare this and served it with schezwan sauce.

Ingredients

For the Filling

  • 1 cup finely chopped mushrooms
  • 1/2 cup finely chopped cabbage
  • 1/4 cup finely chopped carrots
  • 1/4 cup finely chopped coriander
  • 2 - 3 finely chopped green chillies
  • 1/4 cup finely chopped capsicum
  • 1 tsp dark soy sauce
  • 1 tsp black pepper powder
  • 1/2 tsp sugar
  • Salt per taste

For the Slurry

  • 2 tbsp Maida dissolve and mix in 1/4th cup water to prepare a thick slurry.
  • Oil to fry

Instructions

  1. Take 8 - 10 spring roll sheets.
  2. Mix all the ingredients for the filling in a bowl and set aside.
  3. Place spring roll wrapper on a flat surface and apply maida slurry to the sides.
  4. Place a tbsp of filling at one edge of the sheet.
  5. Start folding the sheet inward from the sides first. Fold in the sides of the sheet towards the centre.
  6. Now add maida slurry on the folded side and start rolling the sheet from the filling side.
  7. As you reach the end apply some more slurry making sure it sticks well and rolls don't open up while frying.
  8. Similarly prepare all spring rolls.
  9. Heat oil in a kadhai, fry the Spring Rolls few at a time on a medium high flame till they are nice crisp and golden brown.
  10. Remove all in kitchen absorbent.
  11. Mushroom Spring Rolls are ready! Garnish and serve hot with schezwan sauce or any sauce of your choice.

Notes

  1. I have used ready made spring roll sheets.
  2. I chopped all the vegetables in a food processor so they were very fine, hence I did not cook them. If you wish you can saute the vegetables for few minutes, cook it and use as filling.
  3. I personally prefer vegetables to be crunchy and so I do not cook them before filling the sheets.

What filling does a spring roll have in it?

A spring roll usually contains finely chopped vegetables, shredded chicken and or mince chicken or meat. These are stuffed in a spring roll sheet and deep fried till crispy golden brown.

Spring Rolls are sealed with a semi thick slurry made out of all purpose flour or corn starch with some water.
